Harvest 27th March, 10th April

Winemaking Grapes were harvested on 27th March and 10th April. Picking dates were selected based on analysis and sample tasting. Grapes were destemmed to tank and 800L Terracotta Amphorae and allowed to cold soak for 4 days. The batched were inoculated and plunged daily during fermentation. The wine underwent short post fermentation maceration before being pressed to tank then transferred to French Oak barriques for maturation. The wine was aged in barrel for 12 months before being racked, blended, and sterile filtered then bottled.
